Burek is also very popular street food in Balkan.
Burek is made of phyllo/yufka pastry and filled by hand with varieties of filling from cottage cheese to potato or even apples (my favourite).
The shape changes throughout the Balkan, from rolled version coiled up into a circle to layered flat and cut to squares or triangles.
Kifla is a traditional Balkan soft yeast dough made into a crescent shape then baked. No butter, preservatives or dough softeners used, only simply ingredients flour, water, yeast and a bit of salt.
Old technique of hand kneaded dough and patience (a lot of it 😀) Dough needs time to double rise be deflate it and rise again BUT the result is more than awarding AIRY, BOUNCING DELICIOUS KIFLA!
